WINE MAKING PROCESS
The winemaking process for Soalheiro Alvarinho begins with hand-harvested grapes, collected in small boxes. The must undergoes clarification at low temperatures after pressing. Fermentation is carried out in stainless steel tanks. Following fermentation, the wine is aged on its fine lees, a process that includes stirring (bâtonnage) to enhance structure and texture. Production volumes for the 'Clássico' style are substantial, with approximately 385,000 bottles produced.
