WINE MAKING PROCESS
The winemaking process for Farina's Soave Classico DOC begins with destemming and immediate pressing of the hand-harvested grapes after harvest, typically starting in mid-September. A brief maceration is followed by cleaning the must. Fermentation occurs in stainless steel tanks at controlled temperatures for about ten days, utilizing selected yeasts to preserve aromatics. Post-fermentation, the wine is aged entirely in stainless steel, maintaining its freshness and fruit-forward character, before a period of bottle aging prior to release.
