WINE MAKING PROCESS
The winemaking process for Sandro de Bruno Soave begins with manual harvesting, typically in late September. The grapes undergo destemming followed by a cold skin maceration for 12-18 hours in a closed press. Soft pressing is performed under nitrogen saturation at low temperatures. The must is decanted before fermentation in stainless steel tanks. Following fermentation, the wine is aged on its fine lees for about six months, with weekly bâtonnage. This method aims to preserve the purity of the Garganega grape and highlight the volcanic terroir.
