WINE MAKING PROCESS
The winemaking process for Sobrero Moscato d'Asti begins with destemming and pressing the Moscato Bianco grapes. The free-run must is cooled to 0°C and filtered, then stored until a month before bottling. A slow fermentation is initiated to reach the target alcohol content, after which it is halted by cooling and filtration, leaving residual natural sugars in the wine. The wine does not undergo an aging process and is bottled relatively soon after production.
