WINE MAKING PROCESS
Clos Henri Solange is produced using the Méthode Traditionnelle. The 100% estate-grown Pinot Noir grapes undergo whole-cluster pressing, with only the finest juice selected. Primary fermentation takes place in stainless steel tanks. The base wine is aged on fine lees for 10 months, with a portion in old oak. Secondary fermentation occurs in the bottle, followed by a minimum of 18 months aging 'sur latte' before disgorgement. The vineyard is managed using organic and dry-farming techniques.
