WINE MAKING PROCESS
The winemaking process for the Aveleda Solos de Xisto Alvarinho 2021 begins with manual harvesting and berry selection, followed by cooling of the bunches. The grapes are then gently pressed using low pressures. Fermentation occurs in small stainless steel vats under controlled temperatures. Following fermentation, the wine is aged for nine months, exclusively in stainless steel, to preserve its varietal character and terroir expression.
