WINE MAKING PROCESS
The Sordo Barolo Villero Sordo Giovanni 2017 is produced using traditional methods. Nebbiolo grapes are hand-harvested and fermented in stainless steel tanks with a long maceration period on the skins, including submerged cap maceration for up to 40-50 days. Natural malolactic fermentation takes place. The wine is then aged for a minimum of 24 months in large Slavonian oak barrels, followed by a period in stainless steel tanks before bottling. The estate employs sustainable practices such as cover crops and avoids chemical fertilizers.
