ABOUT THIS WINE
Andrea Occhipinti established his estate in 2004, working on the volcanic slopes of Gradoli, near Lake Bolsena in Lazio. He is dedicated to preserving and championing local indigenous grape varieties, particularly Aleatico and Grechetto Rosso, alongside traditional white varieties like Procanico and Ansonica. Sottobanco is a brilliant expression of these white grapes grown on volcanic soils at 450 meters above sea level, capturing the unique microclimate and mineral-rich terroir of the region.

WINE MAKING PROCESS
The grapes are organically farmed and harvested by hand. Fermentation occurs spontaneously with indigenous yeasts in stainless steel tanks to preserve the fresh, mineral character of the fruit. The wine undergoes a short maceration on the skins and ages on its fine lees in stainless steel before being bottled unfiltered and unfined with minimal sulfur added.
