WINE MAKING PROCESS
Spalek Sekt Extra Brut is produced using the traditional method, involving a secondary fermentation in the bottle to create its effervescence. The wine is aged for 18 months on fine lees, a process known as 'sur lie', which contributes to its complexity and texture. Viticultural practices are organic and partly biodynamic, with a focus on low yields and careful vineyard management. The winery was the first in the Znojmo region to implement gravity processing for grapes.
