WINE MAKING PROCESS
The winemaking process is designed to preserve the pristine, natural characteristics of the Piquepoul Blanc grape. Grapes are harvested during the coolest hours of the night or early morning to prevent oxidation and lock in delicate aromatics. Fermentation takes place entirely in temperature-controlled stainless steel tanks at cool temperatures (15°C to 18°C) without any oak influence. Malolactic fermentation is strictly blocked to maintain the grape's high natural acidity. The wine is then aged briefly on its fine lees in stainless steel vats before early spring bottling to add subtle texture while keeping the profile clean and vibrant.
