WINE MAKING PROCESS
The grapes for Spottswoode Estate Cabernet Sauvignon are fermented in a mix of cement and stainless steel tanks. Following primary fermentation, malolactic fermentation is carried out in barrel. The wine then undergoes an aging period of 20 months, with 60-65% of the barrels being new French and Hungarian oak. Spottswoode Estate Vineyard is farmed organically and is certified Regenerative Organic.
