WINE MAKING PROCESS
The production of St. Stephan's Crown Tokaji Aszú 5 Puttonyos involves a multi-step process. A base wine is created from non-botrytised grapes. Separately, botrytised grapes are dried and then added to this base wine in measured quantities, indicated by the 'Puttonyos' scale; for this wine, 5 puttonyos were used. The botrytised grapes undergo maceration before fermentation, which typically takes place in stainless steel vats. Following fermentation, the wine is aged in oak barrels to develop its character and complexity.
