WINE MAKING PROCESS
The grapes are hand-harvested and gently whole-cluster pressed. Fermentation occurs spontaneously using native yeasts in neutral French oak barrels and stainless steel tanks to preserve the fresh fruit character and mineral drive of the Dundee Hills terroir. The wine undergoes minimal handling, aging on its fine lees to build texture, and is bottled unfined and unfiltered with minimal sulfur additions.
