ABOUT THIS WINE
Stella Solare is a highly coveted white wine project from Château Croix de Labrie, a Grand Cru Classé estate in Saint-Émilion. Managed by husband-and-wife duo Axelle and Pierre Courdurié, the wine is named after their daughter, who also illustrated the label. This rare cuvée is produced from an extremely limited micro-plot of old vines co-planted on Right Bank clay-limestone and gravelly soils. The 2021 vintage represents a historic milestone for the estate, marking their official organic certification after years of biodynamic farming.

WINE MAKING PROCESS
The winemaking process for Stella Solare is meticulous and small-scale, yielding only six barrels (1,600 bottles) in 2021. Grapes are manually harvested in a single day and undergo multiple successive sortings. After being 100% destemmed and cold-macerated, they are pressed immediately to extract only the fine lees. Fermentation takes place in a combination of 50% French oak and 50% acacia wood barrels (half new, half one-year-old). Active lees stirring (bâtonnage) is performed, and malolactic fermentation is completely blocked to preserve the wine's vibrant natural acidity. The wine is aged for 6 to 8 months on fine lees before bottling.
