WINE MAKING PROCESS
The Damascene Stellenbosch Chenin Blanc 2022 is produced using a meticulous winemaking approach. Grapes are whole-cluster pressed, and the resulting juice is settled before being transferred to 1000L oval Austrian oak foudres for fermentation with native yeasts. Minimal sulfur is used throughout the process. Malolactic conversion is prevented to maintain the wine's inherent acidity. The wine undergoes an 11-month aging period 'sur lie' in the same foudres, contributing to its texture and complexity. Grapes are sourced from three specific vineyard sites within the Bottelary ward, each contributing unique characteristics.
