WINE MAKING PROCESS
The Damascene Stellenbosch Syrah 2021 was produced using grapes from three distinct vineyards. Winemaking involved separating the fruit into smaller fermentation batches, with whole cluster fractions between 60% and 75%. Fermentation took place in tulip-shaped concrete fermenters and 1000-litre conical French oak vats, with regular pump-overs. Some batches employed the 'submerged cap' technique for increased body and fruit concentration. The wine underwent maturation for 11 months in 2000-litre conical Austrian oak vats. It was bottled without fining.
