WINE MAKING PROCESS
The winemaking process for the 2016 vintage began with harvesting grapes at optimal ripeness from selected California vineyards. Following a gentle crushing, the grapes underwent temperature-controlled primary fermentation in stainless steel tanks to preserve the vibrant fruit character. The wine was then aged for 10 to 12 months in French oak barrels, with approximately 25% to 30% new French oak and the remainder in seasoned neutral barrels. This aging regimen rounds out the tannins and integrates the oak components seamlessly.
