WINE MAKING PROCESS
Produced from a co-fermentation of local red and white varieties, including Nerello Mascalese, Malvasia, Catarratto, and Moscadella. The grapes are hand-harvested from old vines. Fermentation occurs spontaneously with indigenous yeasts in neutral epoxy tanks, with skin contact lasting around 10 days. The wine is bottled unfined and unfiltered, with absolutely no added sulfur dioxide (SO2), preserving the raw energy and purity of the volcanic fruit.
