WINE MAKING PROCESS
The winemaking process begins with whole bunch pressing, with free-run juice and light solids transferred to barrels. Wild fermentation occurs over two weeks in French oak barrels, with some malolactic fermentation also taking place. The wine is then aged for 12 months in French barriques (new to 4-year-old) and undergoes regular lees stirring. The fruit is hand-picked from estate vineyards on the Bellarine Peninsula.
