WINE MAKING PROCESS
Jesper Friberg Symbios 2021 is produced using natural winemaking techniques. The primary grape is Solaris, with 15% of the fruit being botrytised. Fermentation is carried out using indigenous yeasts. No oak is used in the aging process. A microdose of sulfur (10 mg/l) was added at blending. The vineyard practices emphasize soil health, biodiversity, and holistic balance, avoiding chemical treatments and fertilizers, and instead utilizing herbal teas and microbial fermentations for vine care.
