WINE MAKING PROCESS
The winemaking process for Tenuta delle Terre Nere Etna Rosso Moganazzi 2022 begins with hand-picked grapes harvested in October. Fermentation takes place in stainless steel vats at a controlled temperature of approximately 25°C, with a maceration period of 20-21 days, utilizing selected indigenous yeasts. Following fermentation, the wine undergoes aging: about 80% matures in stainless steel tanks, while the remaining 20% is aged in used French oak barriques for 8-10 months (or 14-16 months for the 2022 vintage). The winery adheres to organic farming practices.
