WINE MAKING PROCESS
The production of this Amarone della Valpolicella involves the 'appassito' method, where harvested grapes are dried to concentrate their sugars and flavors. Following this drying process, the grapes are fermented slowly over 30 days. The resulting wine is then aged for 20 months in a mix of first and second passage American and French oak barriques. This combination of traditional grape drying and extended oak aging is fundamental to the wine's character.
