WINE MAKING PROCESS
The winemaking process for Tenute Mannino Etna Bianco Aurantica 2023 begins with a manual harvest in the second half of September. The grapes undergo soft pressing followed by cold static decantation. Alcoholic fermentation occurs in stainless steel tanks with temperature control (14-15°C). For the 2023 vintage, there is mention of long skin-contact maceration at controlled temperatures and spontaneous alcoholic and malolactic fermentation in stainless steel tanks. The wine is then aged for 12 months in 1500-liter French Oak foudres and 500-liter demi-muids barrels.
