WINE MAKING PROCESS
The Terre à Boire is produced using a co-maceration of whole bunches of Pinot Noir and Pinot Gris for 5-8 days. Fermentation is initiated spontaneously by indigenous yeasts. Following fermentation, the wine undergoes a 3-month aging period in concrete vats. It is bottled without any added sulfur dioxide, and remains unfined and unfiltered, reflecting a commitment to minimal intervention.
