WINE MAKING PROCESS
The winemaking process for this organic Montepulciano d'Abruzzo focuses on preserving primary fruit characteristics and regional authenticity. Grapes are harvested entirely by hand in small boxes during the cool morning hours of early October. After destemming, the must undergoes skin-contact maceration in stainless steel tanks for 7 to 10 days, starting with a cold soak at 15°C before temperature-controlled fermentation at 25-27°C. Regular pump-overs ensure gentle extraction of color and soft tannins. Following pressing, the wine completes both alcoholic and malolactic fermentation in stainless steel, where it ages for approximately six months before bottling without any oak contact.
