WINE MAKING PROCESS
The winemaking process for Terre de Manganèse begins with hand-harvested and sorted Gamay grapes. The grapes are destemmed and undergo maceration in wooden vats. Fermentation is initiated using indigenous yeasts, with a daily practice of 'pigeage' (punching down the cap). Following fermentation, the wine is aged for 12 months in French oak barrels, during which malolactic fermentation also occurs. The wine is aged on its fine lees before a light natural filtration prior to bottling.
