WINE MAKING PROCESS
The winemaking process for Terre de Mistral Reserve Côtes du Rhône Organic begins with the separate vinification of its constituent grape varieties. Fermentation takes place in stainless steel tanks at controlled, low temperatures for about 15 days, utilizing spontaneous fermentation with native yeasts. Following fermentation, 5% of the wine is aged for four months in used French oak barrels, while the remainder is matured in stainless steel. The producer emphasizes minimal intervention throughout the process, avoiding fining and filtration, and limiting the use of sulfur dioxide.
