WINE MAKING PROCESS
The winemaking process for Terre del Barolo Barolo begins with de-stemmed and softly pressed Nebbiolo grapes. Fermentation occurs in stainless steel tanks with selected yeast for 5-6 days, followed by an extended maceration of 5-6 days to enhance polyphenol extraction. During fermentation, delestages and continuous pumping over are utilized. Post-racking, micro-oxygenation is applied for color stabilization, and malolactic fermentation is induced with selected yeast. The wine then undergoes aging for a minimum of 38 months, with at least 18 months in large oak barrels, adhering to Barolo DOCG requirements.
