ABOUT THIS WINE
Terre di San Zeno Amarone della Valpolicella Classico 2016 from Corteforte is a full-bodied red wine from the Veneto region of Italy, specifically the Classico zone of Valpolicella. The producer, Corteforte, has a historical estate dating back to the 14th century, now managed by Carlo Maria Cerutti who champions organic and sustainable viticulture. The wine is unique due to its production through the *appassimento* process, where grapes are dried to concentrate flavors, and its subsequent aging in various oak cask sizes. The vineyards are situated in the Fumane valley, characterized by volcanic and limestone soils, contributing to the wine's distinct profile.

WINE MAKING PROCESS
The production of Terre di San Zeno Amarone della Valpolicella Classico 2016 begins with the *appassimento* process, where harvested grapes are dried on wooden crates for up to four months to concentrate their sugars and flavors. Fermentation then takes place in stainless steel tanks over an extended period of 25-30 days, often extending into cooler months. Following fermentation, the wine is aged in a variety of oak casks and tonneaux, ranging in size from 3.5 to 25 hectoliters. This is followed by a period of bottle aging to further develop the wine's complexity.
