ABOUT THIS WINE
Testament Debit Maraština is a distinctive dry white wine from Testament Winery, located near the historic town of Šibenik in Dalmatia, Croatia. This wine represents a remarkable revival of a traditional blend that has been made in the area for centuries but had not been commercially produced in modern times. Winemaker Juraj Sladić, a rising star in the Croatian wine scene, brought this historic blend back to the market. Testament Winery is committed to organic production and focuses exclusively on indigenous Dalmatian grape varieties. The wine's character is said to embody a "rare marriage of continental and coastal influences," with cold mountain winds preserving freshness and Mediterranean soils providing aromatic richness. Its rarity, organic certification, and its status as a modern expression of a historic local blend make it truly unique.

WINE MAKING PROCESS
The Testament Debit Maraština is crafted from a 50% Debit and 50% Maraština blend, sourced from certified organic vineyards near Šibenik. The unique climate and challenging soils of the region cause the grapes to struggle, leading to more intense flavors and aromas. Grapes are hand-harvested, typically in early September. This wine is a modern interpretation of a traditional field blend, with vinification involving a four-week fermentation under temperature control. To build texture and complexity, the wine is mixed on its lees for a month. Following fermentation, it undergoes aging for four months in large, 500-liter used oak barrels, imparting gentle oak notes without overpowering the fruit.
