WINE MAKING PROCESS
The winemaking process for Testament Opolo begins with grapes harvested at the end of August from organically farmed vineyards in Northern Dalmatia. The grapes undergo quick processing, including destemming, crushing, and a gentle pressing with a brief two hours of skin contact to achieve its delicate rosé hue. Fermentation extends for two months, followed by additional stirring on lees, a technique employed to enhance the wine's complexity and texture. The wine is then aged exclusively in stainless steel tanks, ensuring the preservation of its fresh fruit characteristics without any oak influence.
