ABOUT THIS WINE
Testament Winery, nestled near the medieval town of Šibenik in Northern Dalmatia, is a beacon of organic production, championing indigenous Croatian grape varieties like Pošip. The winery's evocative name, "Testament," is a nod to the region's profound Roman legacy, including ancient amphorae once used for wine transport. This particular Pošip stands out due to its unique terroir near Šibenik, where the vines thrive in extreme conditions on meager limestone soil, with less than 20% topsoil. This challenging environment imparts a distinct freshness and pronounced minerality to the wine, setting it apart from Pošip grown on its native island of Korčula and truly expressing the character of Dalmatian grapes.

WINE MAKING PROCESS
The organically grown Pošip grapes for this wine are carefully harvested in mid-August. Fermentation spans three weeks, utilizing a combination of both wild indigenous and inoculated yeasts, all under strict temperature control to preserve aromatic purity. Following fermentation, the wine undergoes a period of stirring on its lees for two months, a technique that enhances its texture and complexity. The entire aging process takes place in stainless steel tanks, ensuring that the wine's vibrant fruit characteristics and inherent minerality are maintained before bottling.
