WINE MAKING PROCESS
The Armagh Shiraz is hand-harvested, often with multiple passes through the vineyard to select grapes at peak ripeness. Fermentation takes place in open-top fermenters, with techniques like rack-and-return and pump-overs used for extraction. Following fermentation, the wine is aged for 13 to 19 months in a mix of new and old French and American oak hogsheads.
