WINE MAKING PROCESS
The Chocolate Block 2022 is produced using whole-berry fermentation in concrete and stainless steel tanks, with spontaneous fermentation employed. Following fermentation, the wine is aged for 12-14 months in French oak barrels, with a small proportion of new oak. The 2022 vintage was characterized by cooler weather, leading to lower yields but resulting in perfumed fruit and balanced tannins. The winemaking process aims to craft a complex and approachable red blend that reflects the Swartland terroir. An innovative 'OXOline' system was utilized for barrel rotation during maturation.
