WINE MAKING PROCESS
The Fox and the Grapes 2021 involves the separate fermentation of grape components from different regions, utilizing stainless steel tanks and open fermenters for 7-10 days. Malolactic fermentation is carried out in stainless steel. A portion of the wine (around 20%) undergoes aging for 8 months in used American oak hogheads, while the majority (80%) is aged in stainless steel tanks with French oak staves. The final wine is a blend of these two aged components.
