WINE MAKING PROCESS
The Great Bonza Reserve Shiraz Cabernet 2021 is produced by fermenting each grape variety separately. The fruit is crushed and destemmed before fermentation, with temperatures controlled to optimize color and tannin extraction. Following fermentation, the wines are pressed off their skins. A portion of the wine undergoes further aging in oak, specifically 15% in American oak for six months, with a mix of barrel ages. The remaining wine is aged in stainless steel tanks, some with oak staves. This process aims to create a balanced and approachable wine.
