WINE MAKING PROCESS
The d'Arenberg The High Trellis Cabernet Sauvignon 2018 is produced using traditional methods. Grapes are gently crushed and fermented in open, headed-down fermenters, with foot treading utilized for part of the fermentation. Following fermentation, the wine is basket-pressed and transferred to old French oak barriques to complete fermentation and age for up to 20 months. The wine is aged on lees without racking until final blending and is not fined or filtered before bottling.
