WINE MAKING PROCESS
The Gut Oggau Theodora 2022 is produced using grapes from 35-year-old vines. The winemaking process involves hand-harvesting, followed by partial fermentation with skins for approximately two hours. Spontaneous fermentation with native yeasts takes place in used wooden barrels of various sizes. The wine then matures on the lees for about nine months without bâtonnage. Bottling is done without clarification, filtration, or the addition of sulfites. Some sources indicate a small amount of CO2 may be retained at bottling.
