ABOUT THIS WINE
The Thistle & Weed Springdoring Chenin Blanc 2021 is a white wine from WO Swartland, Coastal Region, South Africa. It is produced by Thistle & Weed Pty Ltd, a partnership between the Terblanche and Wiid families. The wine is crafted from 100% Chenin Blanc grapes grown on heritage bush vines planted in the 1960s or 1980s in Joubertskloof on the Paardeberg Mountain, rooted in duplex sand and clay or pure granite soils at 300m elevation. The 2021 vintage benefited from a cool and dry growing season. The wine's name, Springdoring, refers to a local thorn tree, reflecting the producer's inspiration from the tenacity of grapevines and the surrounding flora. The producer collaboration began in 2015, with Etienne Terblanche holding advanced degrees in Viticulture and Oenology, and Stephanie Wiid having previous winemaking experience.

WINE MAKING PROCESS
The Thistle & Weed Springdoring Chenin Blanc 2021 is produced by whole bunch pressing, with only the free run juice being used. The juice undergoes natural fermentation in older French oak barrels. Lees stirring (battonage) is performed for the first month. The wine is then matured on its lees for 9 to 10 months before being bottled unfined and unfiltered. The 2021 vintage benefited from a cool and dry growing season.
