ABOUT THIS WINE
Weingut Thörle, located in the Saulheim municipality of Rheinhessen, has been a family-run estate since 1517. The modern era of the winery began in 2006 when brothers Christoph and Johannes Thörle took over management. They shifted the focus toward organic viticulture, low yields, and minimalist cellar practices. The 'Kalkstein' (limestone) series highlights the unique terroir of Saulheim, where the soils are heavily calcareous. This wine is sourced from top parcels in the Hölle and Schlossberg vineyards, offering a cooler, highly mineral expression of Spätburgunder that rivals classic Burgundian styles.

WINE MAKING PROCESS
The winemaking process for the Saulheim Spätburgunder Kalkstein is designed to preserve the purity of the limestone terroir. Grapes are strictly hand-harvested with multiple passes to ensure optimal maturity. Fermentation is 100% spontaneous using wild yeasts on the skins (Maischegärung) for over 20 days, extracting structural complexity and fine tannins. The wine is then aged for 18 months in French oak barriques (225-liter), with approximately 25% new oak and 75% used barrels. To maintain its authentic structure and mineral character, the wine is bottled unfiltered and without animal fining agents.
