WINE MAKING PROCESS
The winemaking process for Timorasso Colli Tortonesi Derthona begins with the soft pressing of grapes followed by a cold maceration lasting approximately 24 hours. Fermentation takes place at a controlled temperature of 18°C over 35-40 days. Following the first racking, the wine matures for 12-18 months in stainless steel barrels, with regular bâtonnage. Some production may involve aging in French oak barriques. The wine then undergoes a further year of resting in the bottle before release. Manual harvesting is a key practice at the estate.
