WINE MAKING PROCESS
Tío Mateo Fino is produced from 100% Palomino Fino grapes grown in Andalusia. The winemaking process begins with fermentation of the must in stainless steel vats. After fermentation, the base wine is fortified to 15% ABV. The wine then undergoes biological aging under a layer of flor yeast in American oak butts for a minimum of 5 years, utilizing the traditional solera y criaderas system. This system involves the fractional blending of wines of different ages to maintain a consistent style.
