This process aims to capture the wine in its most natural state. The grapes are grown in the chalky 'albariza' soils of Jerez, a region renowned for its Sherry production. WINE MAKING PROCESS
Tío Pepe Fino En Rama begins with Palomino Fino grapes grown in Andalusia's 'albariza' soils. After fermentation, the wine is fortified to around 15% ABV. It then enters a solera and criaderas system for biological aging under a layer of 'flor' yeast for at least 4 to 5 years. The 'En Rama' bottling occurs in spring, selecting wine directly from the casks with minimal filtration or clarification to preserve the natural character and the active flor. Each annual release is a specific selection from a limited number of casks.
