WINE MAKING PROCESS
The Tommasi Palanca Ripasso Valpolicella Classico Superiore is produced using a traditional method involving a second fermentation. After an initial vinification in stainless steel, the wine undergoes refermentation on the Amarone grape skins for about 12 days. This process is followed by an 18-month aging period in large Slavonian oak casks, ranging from 35-hl to 65-hl. The wine then benefits from an additional six months of bottle aging before its release. Grapes are sourced from estate vineyards, and sustainable farming practices are utilized.
