WINE MAKING PROCESS
The Tommolo 2023 is produced from 100% Montepulciano grapes grown in estate vineyards planted between 1985 and 2010, situated at altitudes of 75–150m on clay-rich soils. The viticulture adheres strictly to organic farming practices. Following harvest in mid to late October, the grapes undergo fermentation in steel tanks. For some vintages, there is an indication of partial aging in French oak barrels for one year, intended to add softness and complexity. The winery's overarching philosophy emphasizes respect for nature and sustainable winemaking.
