ABOUT THIS WINE
Domaine Matassa was founded in 2003 by Tom Lubbe, a New Zealander who grew up in South Africa and later moved to Roussillon, where he interned at the legendary Domaine Gauby. Located in Calce, the estate is a benchmark of the global natural wine movement. 'Tommy Ferriol' (formerly known as 'Brutal Rouge') is named after the historic Mas Ferriol estate, which Matassa purchased. This cuvée is crafted from estate vineyards surrounding their winery and home, representing a playful and personal tribute to their terroir.

WINE MAKING PROCESS
The grapes are hand-harvested from old vines (Syrah averaging 30+ years) grown on clay-limestone soils. The fruit is completely destemmed and co-fermented spontaneously using native yeasts, bringing together the red Syrah and white Muscat Blanc à Petits Grains. Maceration is extremely short and gentle, lasting only three to four days. The wine is pressed and aged on its fine lees for six months in stainless steel or neutral fiberglass tanks to preserve primary fruit energy. It is bottled unfined and unfiltered with no added sulfites.
