ABOUT THIS WINE
Torcolato Breganze DOC is a white wine produced by Cantina Beato Bartolomeo da Breganze in the Breganze DOC appellation of Veneto, Italy. The wine is made exclusively from the Vespaiola grape. Its unique identity stems from the traditional 'appassimento' process, where grape bunches are hung to dry for at least four months, concentrating their natural sugars and flavors. Cantina Beato Bartolomeo da Breganze is a cooperative winery dedicated to preserving native grape varieties and showcasing the characteristics of the Breganze territory. The name 'Torcolato' itself refers to the traditional method of drying the grapes, which involves twisting or twining the bunches.

WINE MAKING PROCESS
The production of Torcolato Breganze DOC begins with the careful selection of Vespaiola grape bunches, which are then hung to dry using the traditional 'appassimento' method for at least four months. This drying process concentrates the must, yielding a small amount of thick, sweet liquid. Following drying, the grapes are pressed, and the must undergoes fermentation in stainless steel tanks at controlled temperatures between 18-19°C. The wine is then aged for a minimum of 18 months in large oak barrels (2000 liters) and smaller barriques (225 liters), followed by at least six months of bottle aging. Approximately 12,000 bottles are produced annually.
