WINE MAKING PROCESS
The Torre del Falasco Ripasso Superiore 2021 is produced using the Ripasso method, which involves a second fermentation on the lees of Amarone wine. Grapes are destemmed and crushed, then undergo an initial fermentation in temperature-controlled stainless-steel tanks for around 10 days. Following this, the wine is 'repassed' on the Amarone skins. Aging typically occurs for a minimum of one year, with some descriptions mentioning time in stainless steel or Slavonian oak barrels, followed by bottle aging.
