WINE MAKING PROCESS
The winemaking process for Ottin Torrette Superieur begins with a manual harvest of grapes, which are then immediately cooled. A light pre-fermentative maceration is employed, followed by spontaneous fermentation using indigenous yeasts with continuous pump-overs. The wine is then aged for 12 months in large Austrian oak foudres (20 Hl).
