WINE MAKING PROCESS
The winemaking process for Tossals Selecció Cellers Grifoll Declara begins with an initial cold maceration for eight days. Fermentation is spontaneous, utilizing indigenous yeasts in stainless steel tanks. Maceration times can vary. Following fermentation, the wine is aged for nine months in French oak barrels. Grapes are harvested into small, sterilized boxes to maintain freshness, with the entire process from vineyard to cellar completed in under three hours. Organic and sustainable farming practices are integral to the production.
